Tropical Mango Relish

I can think of no single ingredient that carries the taste of Miami quite like the mango. Adding this fruit to any dish gives it a uniquely 'floribbean' taste. Why not add a touch of Miami to your Thanksgiving table? Here is a recipe from my own table for Mango Relish, perfect as a side dish or a condiment for your turkey. Try it as a sandwich spread for left-over turkey sandwiches. Happy cooking!

1 1/2 cups diced mango
3/4 cup diced papaya
1/2 cup diced pineapple
3/4 cup pineapple juice (if you use canned pineapple, reserved liquid is fine)
1/2 cup orange juice
2 Tbsp orange liqueur
1/2 cup slivered almonds


1. Put all ingredients except the almonds in a saucepan and bring to a boil. Reduce heat to medium, and cook for 10-15 minutes stirring often. When relish begins to thicken, remove from heat. Allow to cool to room temperature.

2. Place in a sealed container in the refrigerator for several hours until cold. Add the almonds right before serving, to keep them from getting soggy. Serves 12 (serving size: 1/4 cup).
